Ingredients: 1 tablespoon olive oil 1 onion, diced 1 carrot, diced 1 celery stalk, diced 2 garlic cloves, minced 8 cups beef or vegetable stock 2 bay leaves 4 sprigs thyme 2 cups frozen mixed vegetables 1 (9-inch) pie crust, unbaked 1 pound ground beef 1 small onion, finely chopped 3 tablespoons all-purpose flour 2 teaspoons dried thyme leaves 1 cup milk Salt and pepper to taste Instructions:

Heat the oil in a large pot over medium heat. Add the onion, carrot, celery, and garlic cloves. Sauté for 5 minutes until the vegetables are tender.    Add the stock and bay leaves to the pot. Bring to a boil. Turn the heat down to low and simmer for 30 minutes.  Remove the bay leaves and thyme sprigs from the pot. Add the frozen mixed vegetables to the soup. Simmer for 10 minutes until the vegetables are heated through.    While the soup is simmering, prepare the meat pie. Preheat oven to 375 degrees Fahrenheit.  In a large bowl, mix together ground beef, chopped onion, flour, thyme leaves, milk, salt and pepper until well combined.   Pour mixture into the pie crust. Bake for 45 minutes until the crust is golden brown and the filling is cooked through. Serve soup and meat pie together for a hearty and satisfying dinner dish!

Finally, I add in the diced chicken, some frozen dumplings, and some salt and pepper to taste. I let everything cook together until the dumplings are cooked through, and then I serve it up hot!

This meal is so comforting and satisfying, and it's perfect for cold winter days like today. It's definitely become one of my go-to meals!
