Turkey Pot Pie
Ingredients: -1 lb. cooked turkey, shredded or chopped -1/2 cup frozen green peas -1/2 cup frozen corn -1/4 cup diced onion -1/4 cup diced celery -1/4 cup unsalted butter -1/2 cup all-purpose flour -3 cups chicken broth -1/2 teaspoon dried thyme -salt and pepper, to taste -2 pie crusts, homemade or store bought Instructions: 1. Preheat oven to 375°F (190°C). 2. In a large pot, melt butter over medium heat. Add onion, celery, and cook until softened, about 5 minutes. Stir in flour and continue cooking for 1 minute. Gradually whisk in chicken broth and thyme until smooth. Bring mixture to a simmer and cook until thickened, about 10 minutes. Season with salt and pepper to taste. 3. Remove pot from heat and let cool slightly. Stir in shredded turkey and frozen peas, corn, and set mixture aside to cool completely. Pour mixture into pie crusts. Bake in preheated oven for 25 minutes. Serve immediately.
