Instructions:

Reheat the oven to 375 degrees F (190 degrees C). Remove the skin from the chicken and place the chicken in a baking dish. Quinoa can be rinsed before cooking to remove any bitterness; however, this is not necessary if using pre-rinsed quinoa. In a saucepan over medium heat, bring the vegetable broth to a boil. Once boiling, add the quinoa. Reduce heat to low and cover with a tight fitting lid. Simmer for 15 minutes. Remove from heat and let sit for 5 minutes. Fluff with a fork. In a large bowl, combine the cooked quinoa, white beans, red onion, red bell pepper, orange bell pepper, olive oil, balsamic vinegar, smoked paprika, oregano, salt and black pepper. Mix well. Pour the mixture over the chicken breasts in the baking dish. Cover with foil and bake for 30 minutes or until heated through. Uncover and continue baking for 10 minutes or until lightly browned on top. Enjoy!

For a homemade consomme pie crust, see recipe below. To assemble: Pour half of the soup into a 9-inch pie dish. Mix the beaten egg into the remaining soup. Pour over the beef mixture in the pie dish. Cover with pastry doughand crimp or pinch the edges to seal well. Cut a few slits in the top of the dough to allow steam to escape. Bake at 400 degrees F for 25 minutes or until golden brown on top." *For a homemade consomme pie crust: In a medium bowl, combine 1/2 cup all-purpose flour, 2 tablespoons butter (cut into small cubes), and 1/4 teaspoon salt. Stir in enough cold water (about 3 tablespoons) to form a soft dough. Roll out on a lightly floured surface to about 1/8 inch thickness. Transfer to a 9-inch pie dish and trim even with edge of dish."
