A classic combination: consomme and meat pie make a perfect meal!
A classic combination of a consomme and meat pie make a perfect meal. The consomme is a clear beef broth that is light, yet flavorful. The meat pie is a hearty dish with a flaky crust and savory filling. This meal is perfect for a winter evening when you need something warm and satisfying.
The key to making a great consomme is to start with quality ingredients. You will need beef bones, mirepoix (a mixture of chopped onion, celery, and carrots), garlic, parsley, and black peppercorns. You can find these ingredients at your local grocery store or butcher shop.
The first step is to brown the beef bones in a large pot or Dutch oven. Then, add the mirepoix and garlic and continue cooking until the vegetables are softened. Next, add water to the pot and bring it to a boil. Reduce the heat to low and simmer for several hours. Add salt and pepper to taste before serving.
The meat pie can be made using store-bought pastry dough or you can make your own dough using flour, salt, butter, and ice water. The filling consists of ground beef, onion, carrots, celery, fresh thyme leaves, Worcestershire sauce, salt and pepper. If you are using homemade pastry dough, roll it out on a lightly floured surface and place it in a 9-inch pie plate. Trim the edges of the dough so that they overhang by about 1 inch. Crimp the edges of the dough using your fingers or a fork.
For the filling, cook the ground beef in a large skillet over medium-high heat until it is browned. Drain any excess fat from the beef and add the onion, carrots, celery, thyme leaves Worcestershire sauce, salt and pepper to the skillet. Cook until the vegetables are tender then pour the mixture into the prepared pie plate. Carefully pour the consomme over top of the filling then bake in a preheated oven at 400 degrees F for 30 minutes or until golden brown on top
