Ingredients:

1 lb. ground beef 1 onion, diced 3 cloves garlic, minced 2 cups beef broth 2 cups water 3 carrots, peeled and diced 3 celery stalks, diced 3 potatoes, peeled and diced 1 tsp. dried thyme leaves 1 bay leaf Salt and pepper to taste Instructions:

  1. In a large soup pot over medium heat, cook the ground beef until browned. Drain any excess fat and remove from heat. 2. Add the onion, garlic, beef broth, water, carrots, celery, potatoes, thyme leaves, bay leaf, salt and pepper to the pot. Simmer for 30 minutes or until the vegetables are tender. 3. Discard the bay leaf and serve warm with some fresh bread on the side. Enjoy!

Warm up on a cold day with this easy and comforting soup.

Ingredients:

1 tbsp olive oil 1 large onion, chopped 3 cloves garlic, minced 3 carrots, peeled and sliced 3 stalks celery, diced 1 potato, peeled and diced 5 cups chicken or vegetable stock 1 can (15 oz) cannellini beans, drained and rinsed 1 can (14.5 oz) diced tomatoes, undrained 2 tsp dried oregano 1 tsp dried thyme Salt and black pepper to taste Optional toppings: Fresh parsley leaves, grated Parmesan cheese or croutons Instructions: Heat the oil in a large pot over medium heat. Add the onion, garlic, carrots, celery, potato and stock. Bring to a boil then reduce the heat to low and simmer for about 15 minutes until the vegetables are tender. Add the beans, tomatoes, oregano and thyme. Season with salt and black pepper to taste. Ladle into bowls and top with fresh parsley leaves, grated Parmesan cheese or croutons if desired. Enjoy!
