A Perfect Meal for chilly Nights: Consomme with Meat Pie

When the temperature outside starts to drop, there's nothing quite like a hot and hearty meal to keep you warm. For a perfect winter dinner, why not try making consomme with meat pie? This dish is easy to make and will fill you up with goodness.

To begin, start by heating some oil in a large pot or Dutch oven. Add the chopped onion and sauté until softened. Add the minced beef and pork and cook until browned. Then, add the flour and stir well to coat the meat. Finally, add the broth and bring to a boil. Reduce the heat to low and simmer for 30 minutes.

While the soup is simmering, prepare the pastry for the meat pie. In a bowl, combine the flour, salt, and pepper. Cut in butter until it resembles coarse crumbs. Stir in enough cold water until a soft dough forms. Roll out on a floured surface and fit into a 9-inch pie plate. Trim edge of pastry 1/2 inch beyond edge of pie plate; fold under edge of pastry so that it extends 1/4 inch above edge of pie plate all around (Edges should be crimped). Prick bottom of crust several times with fork. Bake at 425 degrees for 8 minutes or until golden brown; cool on wire rack.

To assemble the pie, ladle soup into crust evenly; top with sliced cooked beef and pork mixture, then top with stewed tomatoes (If desired). Place top crust over filling; seal edges well by pressing down with fork tines or fingers moistened with cold water (If using). Make five 2-inch slits in top crust to allow steam to escape; brush lightly with milk or beaten egg white (Optionally). Bake at 425 degrees for 25 minutes or until golden brown
